Preparation
Place the chopped vegetable in a blender or food processor in batches. As the machines are running add the oil and vinegar.
Once the vegetables are pureed smooth, pour into a non reactive bowl and continue until everything is pureed. Season with salt
and pepper to taste. Place in a covered container and store in the refrigerator. It should last for 5 days.For the garnish, dice very small the skin of the cucumber, green pepper, red pepper. Also have either store bought or homemade
croutons as well as microgreens.
